What's for Dinner? Autumn Sausage Casserole
I feel like staying home with Baby H. is a huge luxury. I'm super fortunate to be able to spend so much time with him and know Mr. H. works very hard to make that happen. Since becoming a stay at home mom I've tried very hard to have a delicious dinner ready almost every night.

I'm not a chef and cooking can be hard for me. I've tried being a domestic goddess before but this time it seems to be sticking. I plan a weeks worth of meals at a time including left overs for one of the nights. I try to chop and prepare as many ingredients ahead of time. With an infant in the house I really have to take advantage of nap time.
Last night we had Autumn Sausage Casserole from The Crockpot 365 Blog. I was very pleased with how it turned out. A few notes if you decided to make it. I bought fresh chicken sausage from Whole Foods. I also used 1 cup of broth instead of 1/3 cup. The recipe doesn't call for salt but I thought it needed some and would add a good amount next time. This is a hearty dish and perfect for a cold night. (For those Weight Watchers people it's 10PP for 1/4 of the pot.)
